Prepare a pot of water that covers all the beef. Add 5 slices of ginger. Start boiling with high heat and turn to medium heat when the blood foam comes out. Boil without the pot lid.
When the beef turns white, take them out of the water. Cut the beef to small sizes.
Chop the rest of the ginger. Chop the garlic to fine pieces.
Heat the oil at high heat. Add ginger, garlic, dry red pepper and Sichuan pepper corn. Before the garlic turns brown, add beef.
Stir the beef for 3 minutes. Turn to medium heat. Add cookin wine.
