First for the dough, take dough and salt in a bowl and mix. Add 3 tsp oil and mix thoroughly till oil is mixed well with the flour. Now add water and make chapatti like dough and let it resy for about 30 minutes in fridge.
Now for filling, heat a tbsp of oil in a pan, add spinach and cook for 4-5 minutes on medium flame. Now add sweet corn, salt and pepper to taste and keep aside.
Heat butter in another pan, add flour and mix. Now add milk and stir so that there are no lumps.
Now add grated cheese and mix. Add salt and pepper and mix. Add spinach and corn mix to the white sauce and let it cool.
Now take a small ball siz dough and roll into a small chapatti. Cut it round.
Place a spoonful of filling in center and fold like a gujiya. Make all Empanadas like this.
Preheat the Airfryr at 160°C for about 10 minutes. Brush some oil on the Empanadas and put in the Airfryr and cook for 10 minutes at 180°C
Take out and serve hot with any dip/ ketchup.
