  1. Take Potatoes; bite sized
  2. Get .5 Cauliflower; bite sized
  3. Make ready .5 onion; diced
  4. Take 1 small knob of ginger; diced

  6. Get .3 tsp turmeric
  7. Get 1 pinch Garlic powder
  8. Take Lime

Cauliflower and potato curry or aloo gobi is delicious served as a side dish or main course. The famous curry is hugely popular in India but here I wanted to give you the British version. This is just like the amazing aloo gobi curries you find at the best curry houses. Heat vegetable oil in a large saucepan.

Instructions to make Alu go B:
  1. Preheat the oven to 400F. Toss your cauliflower and potatoes in some oil and season w salt & pepper. Bake for 30mins.
  2. Meanwhile, cook your onions and ginger in a pan with 2-3tbsp oil over med heat until very translucent; 10+ mins. A pinch of salt helps bring out the flavor. Let them tan a little, some brown edges, but not burned.
  3. Add in your spices: cumin, turmeric, and garlic powder. Toast until they dance in the pan.
  4. Oh yea! The potatoes & cauliflower must be done - add those to the pan and toss til the cauliflower tans from the turmeric.
  5. Season!!! Salt is much needed. Squeeze in your lime; maybe like 1 whole lime? And a handful of chopped cilantro. MMM! Now tell me that wouldn’t taste good in a burrito? Enjoy :)

This is just like the amazing aloo gobi curries you find at the best curry houses. Heat vegetable oil in a large saucepan. Add the chopped onion and one teaspoon of cumin seeds to the oil. Stir together and cook until onions become creamy, golden, and translucent. Add chopped coriander stalks, two teaspoons of turmeric, and one teaspoon of salt.
