  1. Make ready 1 large Butternut Squash ( about 3 pds.)
  2. Get 3 tbsp butter or good olive oil
  3. Get 2 tbsp brown sugar
  4. Prepare 2 tsp salt
  5. Get 1 tsp fresh ground pepper

Sprinkle brown sugar over each squash. For a simple roasted butternut squash you don't need much. Toss it in some olive oil with salt, pepper, and red pepper flakes for a little kick. You can always spice it up however you like it.

Steps to make Roasted Butternut Squash:
  1. Preheat oven to 400°
  2. Peel and seed Squash and cut into 1 inch chunks. Place Squash on a large non stick sheet pan.
  3. In a small bowl melt butter in microwave about 20-30 seconds.
  4. Add brown sugar to melted butter and blend well.
  5. Pour butter brown sugar mixture over Squash. Give squash a toss so to evenly coat. Salt and pepper and toss again.
  6. Roast squash in the oven for 25-30 minutes turning once in between cooking time.

Toss it in some olive oil with salt, pepper, and red pepper flakes for a little kick. You can always spice it up however you like it. Cubes of butternut squash roasted with maple syrup and cinnamon until caramelized and tender, then tossed with fresh rosemary, it's elegant to eat and easy to prepare. Or to freeze diced cooked butternut squash, spread it out on a parchment-covered baking sheet in an even layer (no overlapping). Roasted butternut squash - crispy and caramelized on the outside, soft and buttery on the inside - is the perfect alternative to potatoes.
