  1. Prepare 1 bunch Asparagus

Melt butter with oil and thyme sprigs in heavy large skillet over medium-high heat. Add asparagus in single layer; using tongs, toss to coat. Sauté, turning often, until crisp-tender and beginning. Melt butter in a skillet over medium-high heat.

Instructions to make Pan Roasted Asparagus:
  1. In a large sauté pan with a lid, on high heat, add the asparagus, olive oil, water, and garlic.
  2. Cook for about 2 minutes uncovered, or until the water has almost evaporated.
  3. Put the lid back on and repeat until the asparagus are crisp-tender, about 5 minutes. The asparagus may brown slightly in spots, which adds to the pan-roasted flavor.
  4. Toss the asparagus with tongs, cover the pan and cook for 1 minute. Remove the lid and toss the asparagus again.
  5. Add the lemon juice and toss to combine.

Sauté, turning often, until crisp-tender and beginning. Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. The secret here is for the oven to be very hot so the asparagus can begin to brown on the outside without overcooking and getting too flimsy.
