Add the cauliflower, and parsnip to the baking sheet, keeping them seperate. Fill a large pot with water and bring to a boil. Spread cauliflower, parsnips, shallots, garlic, and thyme onto a baking sheet, in a single layer, and drizzle with oil. Sprinkle with cumin, paprika, salt and pepper and toss everything together until the vegetables are well coated with oil.

Instructions to make Cauliflower Parsnip & Bacon Soup:
  1. Heat a saucepan over medium heat. Add bacon, onion & garlic, thyme & cook, stirring for 5 minutes.
  2. Add the stock & water to the pan. Increase heat to high, bring to the boil, reduce heat & simmer on medium heat until parsnip is cooked & tender. Set aside for 10 minutes to cool slightly.
  3. With a handheld blender blitz until smooth. Add to bacon and onion mix, cook through for a further 2 minutes.
  4. Garnish with yoghurt & extra bacon.
  5. Note: for a variation I often blitz it all together, and garnish with a tablespoon of crispy bacon.
