We prefer using fine cornmeal over medium grind for best texture, but either will work. For a "buttermilk" effect, we combined almond milk and lemon juice (or apple cider vinegar).

Instructions to make Easy Vegan Cornbread:
  1. Combine milk and lemon in a mug. Let sit for 5-10 min until it curdles and becomes buttermilk.
  2. Meanwhile, whisk dry ingredients (flour, cornmeal, salt, pepper, baking powder).
  3. Pour in wet ingredients (vegan buttermilk and soy milk). Whisk until combined.
  4. Bake for 20-25 min in a 180°C/350°F oven. Enjoy :)

The preparation of this vegan cornbread couldn't be much easier! All you need is a big bowl, a wooden spoon, and a baking dish. All in all, the cornbread is ready in about half an hour.
