  2. cut open squash and remove seeds. place cut side up in a Pyrex baking dish.
  3. cut butter into 1 tablespoon portions and put two into each squash half. sprinkle a dash of salt over both halves. fill bottom of dish with about one inch of water, cover with foil and bake for 45 minutes.
  4. take out of oven and let cool. once cool scoop squash out of gourd and set aside.
  5. in large sautee pan add onion and sautee in olive oil until tender.
  6. add squash drizzle with a little more olive oil, add ginger and Brown sugar (salt and garlic salt to taste) cook until slight Browning takes place. about five minutes, stirring periodically to keep from scorching squash.
  7. serve and enjoy.
