The ingredients needed to make Palabok:
  1. Get 5 cups luke warm water
  2. Take 1 bag palabok noodles
  3. Prepare 5-6 cloves garlic
  4. Get olive oil for frying
  5. Get 1 bunch green onions chopped
  6. Prepare 1/2 pack red annato powdered seasoning
  7. Take 1/2 pound baby scallops
  8. Take 2 cans smoked oysters
  9. Take 1 package frozen cooked mussels
  10. Make ready 1 / 2 pound shrimp 50-60 count
  11. Make ready 2 packets mama sita palabok seasoning mix
  12. Prepare 1 bag chicharrones or pork grinds (crushed finely)
  13. Get 1 lemon cut into wedges for garnish and serving
Instructions to make Palabok:
  1. Soak Palabok noodles in hot water until soft. Drain
  2. Add about 4 inches of water to a large pan. Just enough water to cover the noodles that you will be putting in. Bring water to a simmering boil, turn off heat and add softened noodles. Let noodles kkstand in hot water for 7-9 Minutes. Drain noodles. Set aside.
  3. Add olive oil to pan. Add onion and garlic and sautee. Then add annatto seed powder. Sautee until it turns bright. Add drained noodles and mix well, set aside.
  4. In a large bowl, mix 2 powdered mama sita palabok seasining in 5 cups of lukewarm water, set this aside.
  5. In a large pan, saute green onions and garlic in olive oil. Add squid, shrimp, bay scallops, and last cooked frozen mussels. This will create a broth. Remove seafoods from broth
  6. Let broth boil then turn down to medium and add mama sita mixture. Cook stirring constantly until thick
  7. Mix cooked noodles and seafood together. Poor thickened sauce onto noodles. Fold in cooked canned oysters.
  8. Mix gently until incorporated and cook covered under low heat until warmed throughdg.
  9. Top with crushed chicharrone. Serve with freshly cut lemon wedges to squeeze on top. Serve.
