The ingredients needed to make Crispy Falafel with Hummus:
Take For pickled vegetable:
Get 1 cup water
Make ready 1/2 cup sugar
Make ready 1/2 cup white vinegar

Prepare For Classic Hummus:
Take 1 bowl boiled chickpeas
Take 4 tbsp olive/vegetable oil
Get 1 tsp cumin seed powder
Prepare 1 tbsp roasted sesame seeds
Take 1 tbsp lemon juice
Get to taste Salt
Prepare For Falafel:
Take 1 1/2 cup boiled chickpeas
Prepare 1 roughly chopped onion
Take 5-6 cloves garlic
Prepare 2-3 Green chillies
Get 1 tsp cumin seeds
Prepare 1 tsp coriander powder
Take 1 tbsp lemon juice
Get Pinch baking soda
Get to taste Salt
Make ready 1 tbsp corn flour
Take as required Bread crumbs for coating
Get as required Oil for deep or shallow frying
Make ready As required Olives for garnishing
Steps to make Crispy Falafel with Hummus:
For picked vegetable: Heat water in a pan and add sugar and let it dissolve then turn off the flame. Add white vinegar and mix well.
Now add sliced cucumber, beetroot and carrot and mix well. Add pinch of salt too.
After 6 hours of soaking our pickled vegetable is ready.
For Classic Hummus ingredients. Soak chickpeas overnight and boil and use it.
In a mixer jar, add chickpeas, garlic, sesame seeds, salt, cumin powder, and grind.
Now add olive oil and lemon juice and grind till smooth paste.
For Falafel ingredients:
In a mixer jar, add boiled chickpeas, green chilies, garlic, roughly chopped onion, coriander, cumin seeds, salt, soda, lemon juice, and coriander powder and mix coarsely.
Add cornflour in this mixture so that it combines the Falafel. Start making small balls and coat it in bread crumbs.
Now either you can deep fry the falafel or shallow fry them. Here I have shallow fried them.
Assemble the pickled salad, hummus and falafel and serve. An healthy dish which you can binge on.
Note - I have used boiled chickpeas for falafel you can use overnight soaked chickpeas and for that there is no requirement of corn flour and bread crumbs. You can directly make balls and deep fry them.
