Slow Cooker Chicken Carnitas is a fresh and delicious take on the classic carnitas made with pork. Slow cooked in lime and orange juice, adobo sauce with chipotle peppers, onions, and spices. Steps to make Slow Cooker Chicken Carnitas:
  1. Pour apple juice into slow cooker and place chicken breasts.
  2. Season chicken with cumin, garlic powder, salt, and pepper. Place sliced oranges on top. Squeeze remaining orange over chicken.
  3. Cover and cook on high for 3 hours. After 3 hours, remove chicken and remove bay leaves and orange slices. Shred and return to cooker mixing with juices. Cook on high another hour.
  4. Set broiler to high. Place chicken on baking sheet and drizzle with 2 tbsp olive oil. Broil for 5 minutes.
  5. Remove and drizzle with remaining 2 tbsp olive oil and broil another 5 minutes.
  6. Remove and serve on flour or corn tortillas with your favorite fixings. Enjoy!
  7. Cover and cook on high for 3 hours. After 3 hours, remove chicken and shred and return to cooker mixing with juices. Cook on high another hour.
