  1. Get Filling
  2. Make ready 2-3 tbsp margarine
  3. Take 150 g chickpea flour
  4. Get to taste Salt & pepper, garlic powder
  5. Take 1 vegetable bouillon cube
  6. Take 500 ml soy milk
  7. Prepare 100 ml water
  8. Get 1 onion, chopped
  9. Make ready 430 g frozen chopped spinach
  10. Get 100 g soy yogurt, unsweetened
  11. Prepare Easy Pie Crust
  12. Prepare 250 g AP flour
  13. Prepare 100 ml hot tap water
  14. Get 100 ml oil (I used 50 ml EVOO, 50ml sunflower)or melted margarine
  15. Get 1/2-1 tsp salt (to taste)
  16. Prepare 1/2 tsp baking powder

Don't Be Afraid of Phyllo Dough Many of us learned a lot about cooking from our mothers. My love for spinach pie runs deep in my Greek veins! I could eat it all day every day. Unfortunately, the traditional mix of feta, eggs, and phyllo pastry doesn't fall in line with my plant-based lifestyle.

Steps to make Vegan Spinach Pie:
  1. For the filling: Start off by making a roux: melt margarine in a pot. Add chickpea flour and whisk. Slowly add in milk. Whisk vigorously to break up clumps. Cook for a few minutes.
  2. Next, add spinach, onion, water, stock cube and spices. Cook until spinach has thawed and the mixture has reduced to a thick paste.
  3. Mix in the soy yogurt. Set aside to cool.
  4. For the pie crust: combine all ingredients in a Tupperware box. Cover with a tight lid. Shake vigorously until a ball of dough forms.
  5. Put the ball of dough in the center of a parchment-lined pan. Spread it out with your knuckles. The dough is very forgiving, but take your time with this step. Get the crust as thin as possible without leaving any holes. Patch up any mistakes.
  6. Prick your crust with a fork and blind bake it at 200°C for 5-10 min, just until the dough gets a bit firm.
  7. Pour spinach filling inside the crust and bake it at 180°C for 20 min, then at 200°C for 15 min or until filling is set and crust is golden brown. If the edges are starting to burn before the filling has set, cover your pie with aluminum foil.
  8. Let cool for 10 min and enjoy :)

I could eat it all day every day. Unfortunately, the traditional mix of feta, eggs, and phyllo pastry doesn't fall in line with my plant-based lifestyle. Fill the center with a few tbsp of spinach filling and press the sides together. Spanakopita or spinach pie is probably one of the best-known of all traditional Greek dishes and hands down one of the most delicious. Its traditionally made without cheese so, bonus, authentically vegan too!
